In the past, I have sometimes donned the hat of Gastrodamus, the foodie prophet who claims to know the future and give a preview of it to his readers. I admit I haven't done this kind of forecasting with much accuracy, and on a number of occasions I've been laughably wrong. But forces are at play in the culinary world that will surely coalesce into foods that I will eat in 2011 and that you ought to be able to try as well. Here are six of the things that I see, or at least hope will be, making their way onto my plate soon.
