Pie

You can't have a state fair without either a pie-eating contest or a pie-tasting contest (in which pie bakers compete to see who has the most delicious recipe). These events date at least as far back as the early 1900s, possibly further. So even though this food item doesn't come on a stick and isn't fried, it just might be the most traditional state food of all. But eaters beware: if you enter a pie eating contest, try not to have a "reversal of fortune" (to borrow a competitive eating term) like the one depicted in the 1986 film Stand By Me.
