Foraging

It's not enough to buy local now; chefs are expected to actually tramp around the forest, pulling up weeds and mushrooms. They're all trying to emulate the world's most admired chef, Denmark's René Redzepi, but expect this trend to last just until some chef digs up the wrong mushroom and sends diners on a toxic trip they won't thank him for.
