"You can tell just by looking at this [organic pork] — the way fat runs through the meat, and the texture of it — how good it's going to taste. I mean, it just has so much flavor. It's wild, almost a little gamey. It's a larger loin and has much more juiciness and flavor. [The supermarket pork] didn't taste like anything, kind of watery. All you could taste was salt. The texture was pretty tough. There was no sweetness to it. It has no porkiness; it's pretty generic tasting."
