Pig Out in Bali



Some people go to the central Balinese town of Ubud for the culture. Others go for the pig. The most scrumptious can be found at the open-air Ibu Oka eatery, where the babi guling (suckling pig) is stuffed with a cornucopia of lemongrass, galangal, shallots, chili, garlic, lime leaves and turmeric, among other ingredients, and hand-turned over an open fire for five hours. A banana leaf piled high with tender meat, crackling-crisp blood sausage, rice and piquant vegetable relishes costs around $3.50.
