His restaurant Noma in Copenhagen may only boast two Michelin stars, but last year it snatched the title of world's best from Ferran Adrià's El Bulli, where Redzepi trained and which closes this summer. Redzepi's food, though fiendishly cleverly conceived, appears deceptively simple, and spearheads the trend to use herbs, flowers and other wild, foraged ingredients.
