FOOD: On the Hoof

The steak-hungry U.S. got rare good news: into the nation's twelve chief live stock markets one day last week lumbered 156,900 head of cattle—the biggest day's receipts in 17 years. But the food still had horns & hoofs on it. Cattlemen refused to guess how many steaks-on-the-hoof would go to Midwest feeders for fattening, and how many would go to packing houses for immediate slaughter.

The American Meat Institute added cheer: September production of dressed beef, veal and lamb was 81 million Ib. above the preceding month.
